For a delicious vinegar and oil salad dressing, it is common to use balsamic vinegar, red wine vinegar, or apple cider vinegar. Balsamic vinegar adds a rich, sweet flavor to the dressing, while red wine vinegar provides a tangy and slightly fruity taste. Apple cider vinegar offers a milder, slightly sweet and tangy flavor that complements the oil in the dressing. Ultimately, the choice of vinegar depends on personal preference and the flavor profile you want to achieve in your salad dressing. **

When vinegar is mixed with cooking oil, they do not readily mix together due to their different chemical compositions. Vinegar is mostly water and acetic acid, while cooking oil is a non-polar substance. This causes the two substances to separate, with the vinegar forming droplets within the oil. This is due to the principle that "like dissolves like," meaning that polar substances like vinegar will mix with other polar substances, and non-polar substances like cooking oil will mix with other non-polar substances. **
